Vollkorn Pizza Rolls


Guten Morgennnn! Endlich Freitag!  Und wie am jedem Wochenende Ich möchte gerne pizza essen :-) Aber diesemal habe ich etwas besonderes verarbeitet: Vollkorn pizza Schnecken!


Für die teig Rezept bitte schauen mein alte blogpost PIZZA ITALIANA
Einfach streichen den teig mit ihre liblingste  tomaten sauce... 

danach kommen käse scheiben und salami...

einfach rollen....

Schneiden die roll in 2cm breit schnecken und auf dem backform einsetzen mit ein bisschen raum..dann nochmal 30minuten lassen in ruhe...und dann baken am 230°C fur 40 minuten.

Leicht Kartoffeln und Hähnchen Suppe


Guten Abend mein liblingste! Heute abend moechte Ich gerne die rezepte von diese gesund aber trozdem lecker suppe posten. 


Einfach ein paar schalotten zusammen mit ein hähnchen wurst schälen und in ein pfanne mit ein Esslöffel öl ein paar minuten dünsten.


Danach mit kalte wasser abdecken, ein teTeelöffel saltz eingeben und etwas rosmarine auch. Lassen es kochen für 30 Minuten und am ende ein paar Esslöffel fettarme yoghurt dazu geben für eine ganz besonderes cremigkeit ohne extra fett

Papas Bravas

Buenos Dias mis queridos!!! Por fin ha llegado el fin de semana. Ayer por la tarde estabamos mirando una pelicula que habian rodeado en España cuando de repente me ha entrado una gana de papas bravas a la muerrrrrte! Asi que esto ha sido el exito: unas papas sencilla y muy picantes porque'le he puesto por encima mucho tabasco...aun me esta' quemando la lengua ;-)

Winter Soup: Lentils&Wurst

Hi everyone!  Finally winter has arrived! After a warm start January is dressing with snow our towns and what's better than an healthy and earthy soup in these days? Lentils are full of iron and minerals and if you add also some chicken wurst you'll get a nice protein bomb :-)

Here the ingredients:


In a deep sauce pan add 2 tbs EVOO oil and 2 cloves of garlic. Let it sizzle for a couple of minute. Then add 2 small onions,  the lentils, 4-5 cherry tomatoes and 2 allorum leaves. Cover up with cold water (double the volume of the lentils and add a bit of vegetables stock.


Let it cook for about 35 minutes and then add the wurst for the last 5 minutes of cooking.

Nails of the Week: Snow Fairy

Buenos dias! Hoy me he despertado muy tempranito porque queria ir a dar un paseo en la nieve. Las previsiones habian dicho que la noche pasada deberia haber hecho un monton de nieve...asi que esta mañana me he quedado un poco asi ...porque'de la nieve nisiquiera la ombra...asi que me la he puesta en las uñas :-)

Old but Good Recipe: Cranberry Cake

Morning! Have you ever checked my recipe for the Cranberries Cake? I made it yesterday and got it this morning for Breakfast.  It's awesome! Search it in my chronology at 13/04/2013




Step1: In a bowl whisk together 2 eggs, 50gr sugar and 150gr melted butter.

Step2: Slowly add 300gr of white flour ( 
in which you mixed in 1 bag of cake dry yeast). If you find I
it to be too sticky add also a cup of milk. Then add in 1jar of cranberries. 

Step3: With an electric whip work the eggs white and whip it up until is firm, then add it to the rest of the mix.

Step 5: Bake in oven for 45minutes at 170°C ina plum cake baking tray....Enjoy!

Home made Calzone Fritto

Hi everyone!  Here another italian classic: Calzone fritto.  
 
 
 
Step1 Prepare the dough.For the ingredients to prepare the dough check my post on the pizza.

Step2 Prepare the filling. For the filling mix all together these ings:
250gr Fresh Ricotta (or cottage cheese)
100gr Salami (chopped)
Salt&Pepper (a pinch)
 
******************************************** 
 
 
Step3 Heat in a deep sauce pan a good quantity of seeds oil and fry at medium heat until the calzone is golden brown on both sides.
Serve hot!

NYE Menu: Catrombole di Zia Laura

Good morning!  Today is time to show the last post of my New Year's Menu which is actually a quite common sweet in the south of Italy (in Naples area). Here the steps to prepare Le Catrombole di Zia Laura.

Ingredients for the dough

500grWhite flour type 00
Pinch of salt
2 eggs
1lemon zest
Candied fruit
dry yeast
Sugar

*********************Step1 ************************
To activate the yeast puor it in 300ml warm water with a coffe spoon of sugar. Stir together and set aside for 15min.

*********************Step2 ************************
In a medium saucepan combine the flour, salt , lemon zest and 3 tablespoons of sugar.Transfer the yeast mixture to the flour bowl and Using an electric hand mixer on low speed incorporate everything; then add the eggs one per time completely before adding the next. Beat until smooth and finally add the raisins. Let it raise for 1 hour.

Meanwhile, pour enough oil into a large frying pan to reach a depth of 2 inches. Heat the oil over medium heat until a deep-fry thermometer registers 375 degrees F.

*********************Step4 ************************
Using a small ice-cream scooper or 2 small spoons, carefully drop about a tablespoon of the dough into the hot olive oil, frying in batches. Turn the catrombole once or twice, cooking until golden and puffed up, about 5 minutes. Drain on paper towels. Toss with colorful sugary sprinkles and candied fruit.

Arrange on a plate and serve immediately!

NYE Menu: Tacchinella al Melograno

Hi everyone! Here the recipe of Tacchinella al Melograno akka Pomegranate Turkey Tights. Hope you'll enjoy it!

Step1: Pre heat the oven at 200ºC. Wash the turkey tights under cold running water and then use kitchen paper to dry it up. Make some cuts in the meat and rub all of it with a bit of salt and pepper.

Step2: Wrap all the tights with bacon stripes, then lace it up well with some Rosmarine and keep everything in place with cooking thread. Place everything in a pyrex then pour on top one full glass of white wine. Put in oven for 40minutes.

Step3: Remove the pyrex from the oven and Pour on top of the tights a full glass of pomegranate juice and the seeds of half of a pomegranate then let it cook again for 20 minutes.

Step4: remove from oven and cut the laces before serving.

NYE Menu: Spaghetti ai Polipetti

Hi everyone! Here the instructions to prepare Spaghetti ai Polipetti.  


Step1 Simmer a couple of chopped garlic cloves with one fresh red chili pepper in 3 table spoons of oil.

Step2 Add the squids, 10 cherry tomatoes,1 glass of white wine and a pinch of salt.

Step3 Stir all together and let it cook covered wizh a lid at medium heat for about 25 minutes.
Step4 Cook linguine al dente and mix in the polipetti...and Buon Appetito!

NYE Menu: Carpaccio di Polipo

Happy New Year! 
As promised here the recipe of my NYE Menu. Today's special is:

 Carpaccio di Polipo

Step1: Clean the octopus by removing all non edible parts like eyes, beack and so on, then rinse it well under cold running water.

Step2: Heat in a deep pot, a quantity of water sufficient to cover the whole octopus. Once boiling dip 4 times the tentacles of the octopus by holding it by the head. This will allow the tentacles to get curly. Then let it cook for about 45 minutes together with a red wine cork (it gives some color to the octopus).

Step3: Take an empty water plastic bottle and cut it in twice. Keep the half with the bottom and with a screwer make some holes in the bottom. Remove the octopus from the water and push it into the half of the bottle. You will have to force it inside and you'll see some liquid pouring off the bottom holes. As the octopus as to cool inside it ( in order to get the cilindrical shape)  I suggest to cover it with some plastic sheet and put on top a weight to keep it well compressed. Let It cool in the fridge for 24hrs.
Step4: After cooling the octopus should have a compact cilindrical shape (to extract it cut the bottle), then slice it with a well sharpened knife and serve it with a black pepper, salt, white wine and oil vinagrette.
