Happy Saturday to all my Readers! Have you ever wondered what to do with those left overs from your Risotto? Any kind of rice, no matter if basmati, riso nano or jasmine, will always get sticky after one day left over in the fridge. So here you go...just mix your rice with scrambled eggs, some Parmigiano cheese, form up the ball and roll it in sunflower seeds. Just few minutes too roast in the oven and that's it! Here I have served it with a skinny ensaladilla and was a really tasty "quick fix" dinner :-)
